Quatre-Quarts (Pound Cake)


– 4 eggs
– Flour, same weight as the eggs
– Sugar, same weight as the eggs
– Butter, same weight as the eggs
– 1 teaspoon baking soda (optional)
– 1 pinch of salt.


– This cake is very easy to make. Its name comes from the fact that flour, sugar and butter have the same weight as the eggs (Quatre-quarts = Four quarters).
– Weight the eggs with their shell, and use exactly the same weight for the flour, sugar and butter.

– In a large bowl, whisk the eggs and sugar until smooth.
– Stir in the flour, salt, baking soda (optional) and melted butter. Whisk until smooth.

– Pour the batter in a cake pan. Bake for 40 minutes in a pre-heated oven at 360°F (180°C).
