Jardinière de légumes (mixed vegetables)

Ingredients for 4 persons:

– 1 lb, 450g flat beans
– 3 carrots (10 oz, 300 g)
– 1 lb, 450g frozen peas
– 3 turnips
– 2 potatoes (9 oz, 250g)
– 2-3 spring onions
– 4 tblsps, 1.8 oz, 50g butter
– 1/2 cup, 10 cl water.
– Parsley
– Salt, pepper

Preparation

– Peel vegetables. Chop onions, top and tail beans, slice carrots, cut in dice potatoes and turnips.

– In a saute pan, caramelize chopped onions with butter at medium heat.

– Once onions are caramelized, stir in all vegetables except potatoes (peas, beans, carrots, turnips).
– Add 2 branches of parsley and 1/2 cup of water.
– Add salt and pepper.

– Cover and cook for 20 minutes at low heat.
– Stir in potatoes, cover and cook for an additional 30 minutes at low heat.
– Once cooked, take off the parsley. This is what you should get:

Note: Before serving, you may stir in 1 tblsp of butter and chopped parsley.
