Lentilles aux lardons (Lentils with bacon)
Ingredients for 4 persons:
– 9 oz, 250g French green lentils
– 2 carrots
– 2 onions
– 5 thick slices of smoked bacon
– 1/2 tblsp butter
– 1 tblsp flour
– 1 teaspoon Dijon mustard
– 2 cloves
– Parsley, thyme, bay leaf
– Salt, pepper
– Water
Preparation:
– Drive the cloves in the onion and cut the onion in two.
– Peel the carrots and cut them in two.
– In a large saute pan, put lentils, carrots and onion.
– Cover with water.
– Add bay leaf, thyme, salt and pepper. This is what you should have at this point:
– Cover and cook for 1 hour at low heat.
– While the lentils are cooking, prepare the bacon.
– Cut the bacon into dice.
– In a fry pan, put butter and bacon.
– Fry the bacon until it gets caramelized at medium heat.
– Once bacon is cooked, take it off from the pan.
– Chop the onion and caramelize it in the pan that was used to cook the bacon.
– Stir in 1 tablespoon of flour and add 2 cups of water. Stir until it gets thicker.
– Add bacon, cover and cook for 15 minutes.
– Lastly, stir in 1 teaspoon of mustard.
– When the lentils are cooked, drain the lentils and put them in a large bowl.
– Stir the bacon in the lentils.
– Stir in chopped parsley. This is what you should get:
