French green bean salad


– 8 oz, 250g French green beans
– 2 Roma tomatoes
– 1 spring onion
– Parsley

For the vinaigrette:

– 3 tablespoons of olive oil
– 1 tablespoon of wine vinegar
– 1 pinch of salt and pepper.


– You first need to cook the green beans. Cook them with a pressure cooker  for approx. 10-15 minutes. If you don’t have a pressure cooker, you can also boil them until they get tender.
– Once cooked, cool down the green beans with cold water.

– You are now ready to prepare the salad:
– In a bowl, put the oil, vinegar, salt and pepper.
– Whisk until it looks smooth.

– Stir in chopped onion
– Cut in small dice the tomatoes.
– Add the tomato, green beans and parsley in the bowl.
– Toss until it becomes evenly covered by vinaigrette.

– This is what you should get:

As always, enjoy with baguette, and a glass of Beaujolais or red Sancerre.
