Crème caramel (flan au caramel)

Ingredients for 6 persons:

For the flan:
– 4 eggs
– 2/3 cup, 4.25 oz, 120g sugar
– 2 cups, 1/2 l milk 2% reduced fat

For the caramel:
– 1/2 cup, 3.5 oz, 100 g sugar
– 1 cup, 25 cl water
– few lemon drops

Preparation:

Prepare first the caramel:
– In a saucepan, mix sugar, lemon and water.
– Stir the boiling mix at high heat until caramel becomes brown.
– Pour the caramel in the ramekins. The ramekins should be oven safe.

Warning: Do not touch hot Caramel. Contact may cause severe burns.

Now, prepare the flan.

– In a large bowl, mix eggs and sugar. Whisk energetically until white.
– In a sauce pan, boil the milk.
– Pour the boiling milk to the mix, and stir.


– Take the scum off, and pour the mix in the ramekins.
– Put the ramekins in a baking pan. The baking pan is filled with water up to half of the ramekins.

– Bake for 40 minutes in a pre-heat oven, at 300°F (150°C).
– Stick a knife into the flan to check if it is baked. Nothing should come off the knife if the flan is ready.
– This is what you should get:

– Keep aside the flan in the fridge for one day, and serve the day after. By doing so, the caramel melts in the fridge.
– To serve the flan, you may turn it out as it is shown below:

Tip: You may add some vanilla to the mix, it will taste even better!
