Mediterranean grilled eggplants


– 1 eggplant
– 1 garlic clove
– Parsley
– Olive oil
– Salt, pepper


Slice eggplant in thin slices.

Brush olive oil on eggplant slices.

Cook the eggplants for 5 minutes in a microwave oven. With the microwave, the eggplants will be easier to fry in the next step, and it will reduce the quantity of olive oil. After 5 minutes in the microwave oven, this is what you should get:

You are now about to fry the eggplant. In a large pan, grill the eggplant with 2 tablespoons of olive oil.

Use a flat spatula to flip over the eggplant slices.

Once all the eggplant is cooked, mince garlic and chop parsley. With very little olive oil, fry the garlic and parsley (max. 1-2 minutes) in the pan.

Put the parsley and garlic on top of the eggplant. Add a pinch of salt and pepper.
