Rice with zucchini and tomato

Ingredients for 4 persons:

– 4 zucchinis
– 3 tblsps olive oil
– 1 onion
– 1 garlic clove
– 3 tomatoes
– 1 cup, 7 oz, 200g rice
– 2 cups, 400 ml water
– Salt, pepper


– Chop onion in small dice. Crush the garlic.
– In a large saute pan, put onion and garlic. Add olive oil.

– Caramelize the onion at medium heat.
– Cut the tomatoes in dice. The zucchinis should be prepared and cut like this:

– Stir in the tomatoes and the zucchinis.

– Cover and cook for 30 minutes at low heat.
– After 30 minutes, this is what you should get:

– Stir in the rice and add 2 cups of water.
– Cover and cook for around 25 additional minutes. After 25 minutes, rice is ready!

Note: This recipe gives a very sweet taste to the zucchini, thanks to the onion. It is a good way to make kids eat vegetables!
