Mediterranean Vegetable Stew

Ingredients for 4 persons:

- 4 potatoes
- 4 carrots
- 4 zucchinis
- 4 tomatoes
- 2 tablespoon tomato paste
- 1 onion
- 1 garlic clove
- 2 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- salt, pepper
- water


In a large saute pan, add olive oil and onion chopped in small pieces.
Add cumin and paprika.
Stir at high heat for 5 minutes, until the onion get slightly caramelized.
Add carrots and potatoes. Cover with water.

Add zucchinis, tomatoes, tomato paste and crushed garlic.

Add salt, pepper, and water if necessary to cover the vegetables.
Boil slowly at low heat for 45 minutes, uncovered.
