Pot-au-feu (beef stew with vegetables)

Preparation time: 2 hours

What you need for 4 persons:
– 3 lbs Chuck beef
– 2 turnips
– 4 potatoes
–  5 carrots
– 1 or 2 leeks
– 1 celery branch
– 1 onion
– Spices: cloves, salt, pepper, thyme, bay leaf

Equipment:
-Pressure cooker

To start, I would like to share with you a recipe of Pot-au-feu.  A pot-au-feu is a beef stew with vegetables.  I strongly recommend to use a pressure cooker because you will need to cook the beef  for about 1 hour at least. Without pressure cooker, it will take you 3 or 4 hours.

Phase 1:
– Drive the cloves in the onion
– Fill up the pressure cooker with water
– Put the onion in the water
– Put the beef, thyme, bay leaf, salt and pepper
– Close the pressure cooker and cook for 1 hour.

Phase 2:
– Peel vegetables while the beef is cooking

Phase 3:
– After 1 hour, open the pressure cooker
– Put all the vegetables in the cooker
– Close the cooker and cook for 15 minutes.

Once it is cooked, remove the beef and the vegetables. Keep the stock.

Voilà! It is ready.
In one plate, put a piece of beef, an assortment of vegetables (potato, turnip, leek, celery, carrot) and put some stock on top of it.

The Pot-au-feu is even better with coarse salt and mustard. I usually buy Maille mustard which tastes like in France. Serve the mustard on the side of the plate and eat it with the meat.
