Carrot salad

Ingredients for 4 persons:
– 1/2 lb, 250g carrots
– 1 garlic clove
– Parsley
– 2 tblsps olive oil
– 3 tblsps vinegar
– 1 pinch of salt and pepper


– Shred carrots

– In a bowl, add olive oil, vinegar, salt and pepper (please note I have slightly modified the dressing. It includes more vinegar compared to the regular vinaigrette, as more acidity is better with carrots). Whisk until smooth.
– Add the shredded carrots in the bowl.
– Mince garlic and add it to the carrots.

Add parsley and toss the carrots. This is what you should get:

Note: Carrot salad is even better the day after, as the garlic mixed into the carrot salad.
