Beetroot salad
Ingredients for 4 persons:
– 3 beetroots
– 1 garlic clove
– 3 tablespoons Olive oil
– 1 tablespoon red wine vinegar
– Salt, pepper
Preparation:
Beetroot can sometimes be bought pre-cooked. If you don’t find already pre-cooked, you will need to cook beetroot for around 35-45 minutes in a pressure cooker.
To do so, peel the beetroots and put them in a pressure cooker. Cover the beetroots with water. Close the Pressure cooker and cook for around 35-45 minutes. Beetroots are ready when they are soft inside. This is how the beetroots should look like when they are cooked:
– To prepare the salad, you will need to cool down the beetroots. You can do that with cold water. Then, cut the beetroots in small dice.
– You now need to prepare the dressing.
– In a large bowl, add the oil, vinegar, salt and pepper. Whisk until smooth.
– Add the beetroots.
– Mince the garlic (with a knife is ok) and add it to the beetroots.
– Toss the beetroot with the dressing and the garlic. This is what you should get:
Eat the salad with French baguette. It is delicious, yummy!
