Smoked salmon with blinis
Ingredients for the blinis:
– 1 cup of yoghurt
– 1 egg
– 1 cup of flour
– 1 teaspoon of baking soda
– 1 pinch of salt
In a bowl, mix the yoghurt and the egg. Then add the flour, baking soda and salt.
Whisk until smooth.
Leave aside the batter in a fridge for one hour.
After one hour, you are going to cook the blinis. Oil the pan with paper towel. Heat the pan to medium to high heat. The pan should approximately be the size of a pancake.
Ladle the batter onto the pan.
Use a flat spatula to flip over the blini when bubbles start to bubble up to the surface.
And voilà! you have made your first blini.
Now you are ready to enjoy the blinis with salmon.
Season salmon with sour cream and lemon. It is delicious!
Note concerning smoked salmon: I discovered the real flavor of smoked salmon the day I bought it fresh, not sold pre-packed, in a seafood deli. A good salmon should slightly smell the smoked (not too much). It should look more pink than orange. Prefer wild salmon than farmed salmon. Once you have found a good brand, keep it!
