Tomato salad

There are several ways of doing tomato salad. I remember one Italian friend told me the best tomato salad is only made of tomatoes with olive oil and salt. In all Italian restaurant, you of course find the tomato salad with Mozzarella and balsamic vinegar.

I would like to share with you today another way of doing tomato salad that I find really good. It is made with hard-boiled eggs.

Ingredients:
– 4 tomatoes (try to buy them in a farmer’s market, there is no comparison with the supermarket’s ones).
– 1 egg
– 1 or 2 spring onions (depending on the size)
– parsley (optional)

For the dressing:
– 3 tablespoons of Canola oil, 1 tablespoon of wine vinegar, 1 teaspoon of French Dijon mustard, salt, pepper.

Maille Dijon Mustard

Recipe:

– Hard-boiled the egg (10 minutes in boiling water)

– while the egg is boiling, prepare the dressing: in a bowl, put the mustard, add oil and vinegar,and 1 pinch of  salt and pepper. Whisk until it looks smooth.
– Cut the onion in small pieces and put the onion in the bowl.
– Cut the tomatoes and add them in the bowl.
– When the egg is ready, take off the eggshell and cut the egg in slices. Add the egg in the bowl.
– Add parsley.
– Stir gently in order to mix the dressing and the tomatoes.
– Once finished, it should look like this:

Of course, don’t forget a French baguette to eat with the salad.
