Mediterranean tomato beans with grilled lamb chops


- 4 lamb chops
- 4 handfuls of white beans
- 1 onion
- 1 garlic clove
- 4 tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon cumin
- 1 tablespoon paprika
- 2 tablespoons olive oil
- 1 bay leaf
- thyme (for the meat)
- salt, pepper


Shell the beans and put them in boiling salted water.

Boil the beans for 20 minutes.

Meanwhile, chop the onion.
Caramelize the onion in a large sauté pan with paprika, cumin and olive oil.

Add tomatoes, tomato paste, crushed garlic, bay leaf, salt and pepper.

Cover and cook at low-medium heat for 15 minutes.

Once the beans are ready, stir them in the tomato sauce. This is what you should get:

Now, you need to cook the meat.
In a large sauté pan, put the lamb with olive oil, thyme, salt and pepper.
Note that thyme is here to improve the taste of lamb.
